Interesting project, Though I'm firmly in the camp that doubts you can get it cleaned up for $2k, but it'* always worth trying to keep a low budget. Just looking at that body, you are going to have a lot of "sweat equity" tied up in this one, but it will be a learning experience no doubt.
Good luck, and Good Hunting!
Don't forget to send a nasty-gram to Ralph Nader when you get it done.

Unleaded gas and valve seats.
Actually, Corvairs are all set up to run unleaded gas. They have hardened valve seats pressed into the heads.
Have you heard of Clark'* Corvair parts in MA? You can find almost any part you need.

Well, time to bump this to the top for some semi-bad news. My Dad talked with me last night, and it'* a 50/50 chance we are gonna keep the car. He'* not sure at the time if we are ready to tackle a job of this caliber. It'* going to be hard if his friend decides to not let us use his garage. We came up with some choices, and are going to do some more research, but my Dad insists we work with what we have, as Corvairs in the general 5-600 mile radius are few and far inbetween.
1. Gonna be done the way I mentioned earlier in the topic. (IE just a "suitable for small car shows restore")
2. Gonna be stored in a friend'* barn, and slowly worked on over the course of 2-3 years. (A more careful restoration with more work being done.)
3. Sell it on the Corvair forums, and find a project that is easier to tackle IE something like a 2nd or 3rd Gen Firebird or T/A.
