98 oldsmobile cutlass gls 3.1L v6 need ideas advice and help plz

Please no judgements. I'm new at the hands on part of auto mechanics. My dad was a mechanic all his life and throughout the years his jobs sent him to schools to get certified and I love asking him for help but with being disabled now and all the things going on in his life plus the hour drive it'* harder and harder to reach him.
So I bought this car at 135k miles for the last 5 years it was sitting more than it was on road and only averaged 3k in those 5 years. I had an overheating issue and went to check it out and there was orange foam all up in the reservior. At first I thought stop leak but not the case. It was corrosion and rust. Everything on the car was still factory. I changed the reservior bc it was really caked up in there and it had very thin cracks forming when i bought it. flushed the system a few times best I could. Still some rust especially in the radiator but for the most part it'* pretty well taken care of. Didn't solve issue. I just changed thermostat and I'm in process of getting new hoses. In the middle of all this the calve stem on the radiator which the hose runs to the reservior snapped off. I just put a new replacement valve but it is plastic and I do plan on switching to metal as soon as I can. Now that I did all this my temp gage works when it wants to but when it doesn't work the car has been accelerating on its own. I'm at a loss. I didn't change out any wires but I did notice my bf messing with it and he touched the acceleration piece (still learning proper names of everything also) so that'* been a nightmare trying to adjust notch by notch as I'm not too sure where it was to begin with. Also, the hoses aren't building pressure or they're building too much pressure. My brother also works on cars and he took out the top hose from the reservior across the engine to a metal piece that a hose attaches to. He said it'* something with the overflow and I could get rid of it bc the original metal piece was severely kinked when it was bought and when we tried to unkink it it tore the bottom of the metal hose and left a gaping hole. That'* all that'* been done so my question is what do I need to do now. What do I focus on to get system running properly the acceleration to stop going crazy and the temp gauge to work properly? I can attach pics if needed.
