Thanks everyone - I will be checking into all of the suggestions!
Just a little more info:
When turning the key to the accessory position - as the videos show there is most of the time a long pause before anything happens (lights on the dash come on, etc.).
However, after turning the key to the accessory position to start the car - if I turn on the lights - or roll the automatic windows down - then the dash lights and power come on right away.
Also, as stated above - these problems only seem to happen when the temperature is above 40"F or so - the car starts normal if it is colder outside (below 39" F or so).
Another "fun thing" happened the other day - after the hard time starting as usual, while driving in traffic - I switched the fog lights on - and the car immediately died in traffic.

Did you ever check and clean based on this?:
A lot of what you're describing can be caused by this. Mine will stall in otherwise normal conditions if it is at or near idle and I step on the brake pedal even slightly . . . because the brake lights drop voltage enough to make the PCM drunk on low voltage . . . like what you described with your fog lights. Without the battery, the alternator can keep up with the sudden current demand when revved up a bit, but usually can't at idle.

I checked the battery and the batter terminals look fine and tight.
I also checked the fuses and relays - they looked fine.
However - I did (just) noticed something.
When the car starts - the RPM gauge and MPH gauge do not do a sweep - like the rest of the gauges do.
The RPM gauge goes up to about 1500 and then stays there - the MPH gauge doesn't move at all.
The posted videos above show this - somehow I missed that.
Aren't all of the gauges supposed to do the "sweep" upon start up?
Thanks!

Here is how mine responds. Everything you tell me says you have a bad connection. Cables can break strands internally and look fine on the outside. I’d start moving the battery cables especially where they bend and close to connections. Do this while the car is turned on and see if you can track down the bad cable or connection point. Battery acid can wick down the battery cables and eat copper. Start moving them hard and see if you can get a reaction.

You don't think the RPM (and MPH) gauge not sweeping at start up like the rest of the gauges has anything to do with it?
Is the RPM (and MPH) needle supposed to sweep like the others on the dash?

I can't remember which ones do and which don't. If they move as expected when you drive it then I wouldn't worry about it. It'* just a gimmick anyways. The Buick LeSabre built on the same platform at the same factory didn't do the sweepy thing.
