There is not really any way to test the IAC, unless you have a scanner like the dealerships have.
You could try the basic stuff first, remove the IAC and clean off the tip (pintle), look into the bore and see if it is full of carbon deposits.
I have seen it mentioned that when the issue occurs, you could remove the IAC, and have a friend put their finger in the hole and see if anything changes, I have never tried that personally though.
That would not work for you while driving down the road of course..
I have heard that usually when they fail, they fail all the way down lowering idle, or up raising the idle.
You could start the car up, as soon as it reaches normal idle speed, unplug the IAC and drive for a little while, the ECM will not be able to adjust anything to compensate for added, or reduced loads on the motor, so it won't run perfectly, but it should run without stalling on you. Just don't try to give it too much gas, drive it normally..

You can't put a finger on the hole. If you look at the physical structure of the TB, you will see its pointless.

Ahhh ok, I was not sure, I just remember one of the members of another site I frequented before here suggested that, they usually knew their stuff, but they were more into modding the motors, and adding HP..
I'd have to remove mine to see exactly why that is not possible, I'll just see if I can find a pic of the IAC bore, I believe you, I just like to see things as well, so I have a better understanding of why something is not possible.

I wonder if a bad IAC would cause it to stall completely at any rpm? I have had this car die while I was going 70 down the expressway and also while I was sitting at a stop light.

Did you ever try to start it by disconnecting the air intake breather tube from the side of the throttle body, then spray a little starting fluid, or some carb cleaner into the side of it, you will have to open the butterfly valve a bit, then give a few squirts into the throttle body as somebody tries to crank it over?
Of course do this when it gets hot, and won't restart.
If it starts when you do that then I am betting your injectors are not pulsing, which you are going to then verify each injector has a pulse when cranking it over when it won't start.
You can try to go to a local auto parts store and see if they rent out tools, if so you should be able to rent a Noid Light, if you cannot find one there here is a cheap one that will work.
