I would get it tested to see how inaccurate the temp gauge on the dash is.
I had a 95 SSEi that showed me two things. First.. that the gauge was pretty far off. Second..the gauge isn't linear , actual 190 looked like 200, actual 210 looked like 240.

Also i think it reads right, I mean when the gauge gets hot, the fans kick on, so I am assuming that it is getting into the hotter range.
Also, a few weeks ago the gauge read normal, around 180 or so and didn't fluxuate allot..... Just an FYI...... Maybe its a lower intake gasket?

lower intake gasket shouldn't cause the car to run warm.
I thought my gauge was accurate to a certain degree too.. don't fool yourself. Watch your gauge and see what temps the low fan comes on..then the high.

Update: I had the car scanned and they said it was indeed running hot so i have replaced the heater core and the water pump, this fixed the overheating problem, but it is still getting a SES light..... Same code. Quad driver fault....
